FQI-SMART FOOD QUALITY INDICATOR FILM WITH RED CABBAGE DYE

Abstract: Good food packaging is intended to protect food and provide information on its quality. The lack of information on food condition at the time of purchase and before consumption leads to more food waste. Therefore, a smart food quality indicator (FQI)  that can act as a pH dye indicator to measure food freshness have been developed. The release of acid from food deterioration results in colour changes, indicating the packaged food’s poor condition. FQI is an innovation of smart indicator film derives from peƧtin/deep eutectic solvent added with anthocyanin from red cabbage. The film indicator’s properties include thickness, solubility, moisture absorption and degradation were analyzed to characterize the film’s effectiveness. The FQI film has shown a good solubility and higher degradation rate than the control. Furthermore, FQI film portrays a great response to the colour changes according to the wide range of pH value. In conclusion, FQI has the potential to reduce the food waste problem. The film can be manufacture as food packaging as it quickly degrades and shows the quality of food packaging.
